Cod Ceviche

Ingredients

FISH

200 g cod

Ceviche marinade

Zest and juice from 1 lemon
Zest and juice from 1 lime
60 g spring onion
5 g coriander
Zest and juice from 2 oranges
½ chopped orange
100 g finely chopped shallots
10 g Maldon sea salt

To decorate

Sesame seeds
Coriander
Fresh salad

Preparation

FISH

Cut into small pieces.

Ceviche

Mix all ingredients for the marinade in a bowl.
Cover fish in the marinade and refrigerate for at least 2 hours.
Serve with fresh salad, coriander and sesame seeds.
